Fake It >> Zuppa Toscana
or, The Olive Garden Soup
Prep: 35 min
Serves: 61 lb Spicy Italian Sausage, crumbled
1/2 lb Bacon, diced
4 C Water
2 14.5-oz cans (about 3 2/3 C) Chicken Broth
2 Large Russet Potatoes (we like more, I use 4)
2 Garlic Cloves, crushed
1 Med Onion, chopped
2 C Kale or Swiss Chard, chopped fine
1 C Heavy Whipping Cream
Salt, Black Pepper, and Crushed Red Pepper Flakes, to taste
1} In a skillet over medium-high heat, brown sausage; drain, set aside.
2} Repeat with bacon.
3} Place water, broth, potatoes, garlic, and onion in a 4-qt pot; simmer over medium heat until potatoes are tender.
4} Add sausage and bacon to pot; simmer 10 minutes.
5} Add kale and cream; season with salt and peppers; heat through.
