Deborah's -{Excellent, Amazing, Simply Awesome, Really Good}- Coffee Ice Cream


Homemade
Coffee Ice Cream
Scald together:
4  Cups  2% Milk
2-3/4  Cups  Sugar
1/2  Cup  Instant Coffee Crystals
3/4  teaspoon  Salt
and chill in refrigerator until cold.

When cold, pour into ice cream freezer canister and add the following, stirring well:
4  Cups  Half-and-Half
2  Tablespoons  Vanilla
4  Cups  Whipping Cream
1-1/2  Cups  Coffee Creamer (we like French Vanilla or Vanilla-Toffee Caramel)
Milk, enough to fill canister to the fill line

Freeze according to manufacture's directions.  When the Ice Cream is beginning to firm up, but not completely frozen, add in:
6 oz. grated Chocolate Bar
Stir well to combine and continue freezing until the Ice Cream is done. 

Is it ever 'too late in the season' for Homemade Ice Cream?  I think not, especially if it's as good of a recipe as this one.  My dear friend Deborah gave me this recipe years ago and we've called it Deborah's Coffee Ice Cream ever since.  When I asked her for permission to share it, she laughed and said, "Sure!  It's not my recipe; I found it in the instruction manual for the White Mountain Ice Cream Freezer."  So there you have it.  She might not claim it as hers, but we do!

Sausage Broccoli Manicotti


Sausage Broccoli Manicotti

1  8-oz  Manicotti Noodles

2  Cups  Cottage Cheese 
1  10-oz  frozen chopped Broccoli, thawed and well-drained
1-1/2  Cups  shredded Mozzarella Cheese, divided
3/4  Cup  Parmesan Cheese, divided 
1  Egg
2  teaspoons  fresh Parsley
1/2  teaspoon  Onion Powder
1/2  teaspoon  Black Pepper
1/8  teaspoon  Garlic Powder

1  pound  Bulk Italian Sausage -sweet or spicy, cook's choice
4  Cups  Meatless Spaghetti Sauce
2  cloves  Garlic, minced

Cook Manicotti according to package directions, using minimum cooking time; drain.  Toss lightly with Olive Oil and return to package trays; set aside.

In a medium bowl, combine the Cottage Cheese, Broccoli, 1 Cup Mozzarella, 1/4 Cup Parmesan, Egg, Parsley, Onion Powder, Black Pepper, and Garlic Powder.  Refrigerate until needed.  (You may want to run the Broccoli through the blender if the chunks are large; a smoother mixture is easier to stuff into the Manicotti.)

Cook Italian Sausage over medium heat in a skillet; drain well.  Add Spaghetti Sauce and minced Garlic.  Spread 1 Cup Meat sauce in the bottom of a greased 9x13 pan.  Stuff the Broccoli-Cheese mixture into the Manicotti shells and arrange over the Meat sauce.  Top with remaining Meat sauce and Cheeses.  Bake, uncovered, at 350* for 40-50 minutes, or until hot through.  Makes 14 Sausage Broccoli Manicotti; Serves 6-8.  This freezes well, too!


Today is Rosh Hashana, the Jewish Feast of Trumpets.  I know I've shared these verses before, but wouldn't it be wonderful if today is the day the Lord returns?  Let's keep looking for Him!

Farewell, Summer

Farewell, Summer



Wow.
It's hard to believe that the last time I posted, it was May.
My intention was to take -{2 weeks}- off so we could celebrate three milestone Birthdays and then be back here with some new Recipes.

Boy, was I ever mistaken.

After the first of the  Birthday Parties, we had a Camping Trip over Father's Day, the second Birthday Party and then Family Reunion--Mt. Hermon--Friends & Family from out of state--Woodshop Days--Funerals--Mammoth Trip--First Day of School.

It all starts to run together and become a big blur.

I was certain that the first week of school would be slower but not so, and for a wonderful reason:  J & D proclaimed their Faith in Jesus Christ and asked for Baptism!  Wonderful Rejoicing!

And so, here are a few snapshots of the Summer (I promise not to bore you).
And the following post WILL be back to normal!
